Ingredients
- 350g/14oz prepared short crust pastry
- 3 eggs, beaten
- 300ml/ 1/2 pint milk
- 6 rashers lean bacon, cut into small pieces
- 1 large onion, finely chopped
- 1 tablespoon oil
- 100g/4oz grated Leskol
- Tomato slices
- Salt and pepper
Cooking Instructions
Quiche Lorraine
Roll out pastry, and line a 25cm/10 inch heatproof flan dish. Lightly fry the bacon and onion in the oil for 1-2 minutes. Whisk together the eggs, milk and seasoning.
Spread the bacon, onion and Leskol evenly over the lined flan dish and top with the tomato slices. Pour the egg/milk mixture over the top.
Preheat oven to 180°C/350°F/Gas mark 4.
Place dish in the middle of oven and cook for 35-40 minutes until thoroughly cooked and golden brown.
