Stuffed Peppers

Ingredients

  • 4 medium sized green peppers
  • 150g/6oz patna rice
  • 75g/3oz streaky bacon (diced and lightly grilled)
  • 200g/8oz-grated Leskol
  • 1 dessertspoon tomato paste/ketchup
  • Salt and pepper
  • Pinch of nutmeg
  • 1 egg

Stuffed Peppers

Cut the tops off the peppers, remove seeds and blanch in boiling water with the tops for 3 – 4 minutes. Drain well upside down. Cook rice in boiled water until tender, drain well.

Mix together the rice, bacon, Leskol, tomato paste, seasoning and nutmeg, and bind with the lightly beaten egg.

Fill each pepper with the Leskol mixture, packing firmly. Stand peppers in a buttered ovenproof dish and place tops of peppers on each as a lid.

Pour 1 pint of cold water into the dish. Bake in a moderate oven (180°C/350°F/Gas mark 4)for 30-35 minutes. Remove tops before serving.
